Hello Isabel:
Here is your early favorable reply. In the USA today we trash 14 Billion pounds of fresh fruit and produce every year. Just over one billion is recovered by food banks that serve the population most in need of healthy food. The food innovation center will co-sponsor (with food bank and food industry) a student product development contest to make fresh food available to low income people in need in a form that is appealing, nutritious, safe and economical. The teams must be multidisciplinary as issues such as process, cost, distribution, sustainability, culture, or the business plan are all keys to success. Your cookbook idea could help make food for health flow to those in need. We need systems that perpetuate on profit not on philanthropy. These are unripe thoughts where all fresh ideas are sought.

Intermarche's inglorious fruit campaign in case you missed it:

Hello Ken,

Thanks for including me. Make fresh fruits, vegetables and grains easily available and economical for low income families and make a recipe book on how to make dishes tasty, nutritious and safe. An early and favorable reply would be greatly appreciated.

Regards,

Isabel Blackman PhD
