Title: Application of Cold Plasma in Food Processing
Speaker: Rakesh K. Singh, Ph.D.
Topic: The webinar will cover recent literature and the research done in the speaker’s lab. Atmospheric cold plasma (ACP) is an innovative technology that has gained attention as a nonthermal treatment in food processing due to its potential to enhance food safety, shelf life, and quality. Our research has focused on bacterial inactivation in fruit juices while preserving fresh-like qualities. This has reduced the levels of spoilage microorganisms and eliminated pathogens. ACP has also preserved the flavor compounds in apple cider and cantaloupe juice. We have also modified the milk protein properties using ACP treatments.

Join us for a webinar and question and answer session with Rakesh Singh, Ph.D., Professor and former Head of Food Science at the University of Georgia and Phi Tau Sigma Lifetime Member who will discuss the application of cold plasma as a non thermal treatment to enhance safety of fruit juices, modification of proteins, and aroma/flavor enhancement of certain foods. The integration of atmospheric cold plasma in food processing offers a promising approach to enhance food safety and quality. As research continues to advance, we can expect to see broader applications and acceptance in the food industry.
