Seafood is processed under FDA HACCP guidelines.  This creates a paper trail of documentation that shows that, while the product was under your care, it was handled safely.  As long as you follow the guidelines and keep up with the (sometimes copious) paperwork, you are covered.  Product liability insurance is a good idea too.
