I have used ReadIris 11.6.3 OCR software (they have a version compatible
with Asian languages) in the past for turning PDFs into text.  It is
approximately 90-95% accurate for print material, meaning that you will
definitely have to make corrections yourself after running the program.
It is not very good at all with handwritten material. There may be better
options available, but I'm posting since I didn't see other comments from
other list members.
