tldr: only ONE person can set up Zoom meetings for a class.
After lengthy discussion with Carmen help...
Carmen/Zoom has an 'authorized zoom meeting scheduler' for each class and only that person can schedule Zoom meetings. For example, Dr Skinner set up recitation meetings for Soory's lecture. This prevents Soory from setting up lecture meetings or office hour meetings. Changing the authorized person _removes_ all of the meetings that the previous person set up, so that if the Carmen folks switch Soory's class to Soory, then Skinner's meetings will disappear.
I found this out when I set up recitations meetings for Hirata and Lau, but the meetings got attached to my lecture instead because I wasn't the meeting maker for their classes but I was for mine.
If you're having issues with setting up Zoom meetings for a class this might be why.
Anyone else wanting to set up meetings needs to do so OUTSIDE of carmen.
