Presentation Topic: Product Quality & Consistency Presentation Titles: Optimizing Depuration Procedures for Optimal Taste and Product Quality Preparation and Transportation of Live Warmwater Fish Presenters: John Davidson III & Forrest Wynne Presentation Descriptions: Off-flavor compounds, geosmin (GSM) and 2-methylisoborneol (MIB), bioaccumulate in Atlantic salmon and other species produced in recirculating aquaculture systems (RAS) causing earthy, muddy tastes that are unacceptable to consumers. Over the last decade, the Freshwater Institute (FI) has developed standard operating procedures to effectively eliminate off-flavor concerns from fish prior to harvest ? a process known as depuration. Dr. John Davidson will discuss step-by-step application of these important procedures, as well as emerging solutions for off-flavor in RAS-produced fish. Taste is a vital marketing attribute for fish going to market channels that provide seafood for human consumption. Still, it is not the only attribute for farmers selling live fish for the bait, stocking, ornamental, food, and production sectors. If you want to know more about getting your fish to their final destination in good condition, tune into the talk titled Preparation and Transportation of Live Warmwater Fish. Forrest Wynne will discuss how to get high-quality live fish to market. Speaker Bio: John Davidson is a Research Scientist with the Freshwater Institute. He is responsible for managing research projects and for contributing to grant proposals and peer-reviewed and industry press publications spanning a broad range of topics, including fish production technologies, fish biology and physiological performance, water quality, off-flavor remediation techniques, and sustainable aquafeeds. John has worked for the Freshwater Institute for more than 20 years, publishing numerous research and industry articles focused on fish production in recirculating aquaculture systems, earning him Intrafish?s 40 under 40 Award in 2016 and multiple Superior Paper Awards from the Aquacultural Engineering Society. John holds a Dr. Philos. from the University of Bergen, Norway, a Master of Science in Wildlife and Fisheries Resources from West Virginia University, and a Bachelor of Science degree from Shepherd University. Forrest Wynne is an Extension Specialist with Kentucky State University. He specializes in aquaculture, fee fishing, pond management, and aquatic vegetation control. Forrest has worked in extension in Kentucky for over three decades and has published numerous professional publications focused on aquaculture production. Forrest holds a Master of Science (MS) in Fisheries Management from Mississippi State University, a Bachelor of Science (BS) in Fisheries Biology from The Evergreen State College, and an Associates of Science (AS) in Fisheries Technology from Peninsula College.
